Les BonBons ~ Custom Candy Buffets and Dessert Bars

Many of you will not know that in a "former life" I was a full-out, certified chef. I have the culinary arts degree and all. While I am not a working chef, I still keep my hands in cooking, catering occasionally and cooking for parties. For a couple of years I even had a gig as the banquet chef at at local wedding venue. Needless to say, I know my wedding food, and I believe this helps me be an even better planner.

My love in culinary arts has always been baking, desserts, and anything that requires detail and precision ("frou-frou" cooking). So I have decided to launch Les BonBons, as the new culinary division of Tres Beau Weddings!

I am very sorry I'm so far behind on blogging for Tres Beau Blog! I have even had these images from Bentley Gray Photography for a few weeks!

So I wanted to highlight John and Devin's wedding to help give an idea about my Day-of Directing Services. The wedding was at Shades Mountain Independent Church, where John is on staff, and the reception was at the lovely Park Lane by Kathy G.

So why hire even a Day-of Director? Here's several reasons and a little bit about what I do as a Day-of Director.

Crisis Averted

Well here I am, captured forever by Bentley's lens, sewing the hem back in John's trousers. John was all dressed and ready to see his bride for the first time, and he discovered he had ripped the hem of his pants while dressing. Fortunately for him, I was ready with a sewing kit! I had it fixed in a jiffy!

Why is this little incident important? Imagine if I were not there. I don't think his mom had made it to the church yet, so that leaves the bride's mom or a bridesmaid to try and help, which would take much more time, as the ladies are usually still trying to get ready. Then who carries a sewing kit around with them?? This would have thrown the photographer's schedule off, eating into precious shooting time! Having a Day-of Director is crucial for things like this and I can help avert something, even as minor as a ripped hem, from becoming a major crisis.

I have super-glued beads back on a gown, helped a mom decide on earrings, shown the bridesmaids how to properly bustle the bride's gown, bought the communion elements because someone forgot them...and my list goes on.

Here I am pinning John's boutonniere before his portraits with Bentley. Ever tried to pin one? They are tricky and often times the guys try to do it themselves and their flowers end up crooked. Or worse, they fall off.
Now, crooked boutonnieres are not going to make or break a wedding, but its one of those tiny details that DO make a difference. And I've heard more than one photographer's sigh of relief that THEY don't have to try and pin boutonnieres, when they are supposed to be getting a great shot of them (like the one above!)

As a Day-of-Director, I take care of all the minute details. You don't have to even think about them, nor does your mother, your maid of honor, or anyone else. I am at your location before photos begin to pin bouts, pin corsages, dry the stems of your bouquets so they don't stain your dress, light the candles, arrange the guest book table (and have extra pens waiting), and ensure gifts are in the proper location (and watched over). I will make sure the musicians start on time, that the lighting is low and romantic, and the pew bows are straight. I keep up with the flower girl's basket and the ring bearer's pillow and make sure the ushers are doing their job.

Layout, Order of Service and Flow

Devin was a breeze to work with, and I have done countless wedding with the pastor that married them, so helping her with her Order of Service and stage layout was painless...for both of us!

I walk you through your wedding ceremony step-by-step, based on your officiant's service, and we figure out together how everything will flow. I advise on where special songs would be best during the ceremony and help decide you on the best use of your space and where everyone will stand. I outline where and whom gets special seating for the ceremony and when special elements like the unity candle should happen. We will also walk through the timeline of the entire day, including the photographer's shooting schedule, when the flowers will arrive and when the limo needs to arrive. This will help you relax and enjoy your wedding day so much more, knowing that I'm making sure that everything is flowing how you had envisioned your day! Plus, at the rehearsal, I'll make sure your attendants all know where to be and when!

I hope this gives you a better idea of what I do and why it's important to have (at least!) a Day-of Director for you wedding!

Fun Going-Ons and a Link to a Great Slideshow!

Hi Tres Beau readers! I took a little break last week from the daily grind....we went to the beach for a few days (with a dozen or so college students in tow). The weather was beautiful and the sand and sea relaxing--Just what I needed!

While I was off last week I met a great DJ, Geoff of JAMM Entertainment Service. He is super nice and we sat and chatted about weddings and what we do. Did you know that JAMM offers special lighting options and custom draping? I was thrilled to know that they have that service in addition to their very professional DJ services! Special lighting for an event can make all the difference in a ho-hum space, transforming it into an awesome space. Check out their website for pictures!

I'm developing a new service that I will be offering, in addition to my wedding planning, directing and design services! Some of you know that I have been trained as a professional chef. I have my Culinary Arts degree from a local community college, and I worked as a chef for several years at Saks Fifth Avenue's corporate office in corporate dining and catering. And while I am not a "practicing" chef, I still enjoy cooking and experimenting! My favorite things are desserts and baking, so I have decided to open Les BonBons, couture candies and confections! Planning Help: First Steps After the Bling

Next in my series of Planning Help, I'd like to talk about what the essential first steps in planning, when you first get engaged!

1. When and Where

And really, the when is more important than the where, in my opinion. Unless you just have to have a particular venue or church or other professional that is not available on the date you want. And some brides are willing to work their wedding date around who they want involved.

[I have a sweet bride, who is also a childhood friend, that went with her secondary date so that I could be her planner! It's certainly humbling when a client and friend is willing to do that! (I will be out of the country for missions on her original date). Fortunately for both of us, her dream venues were also available! (Bluff Park United Methodist and Ross Bridge Resort--I'll definitely have more on that wedding soon!)]

Some considerations when looking at dates:

Dates that might be significant to you as a couple. For example, one couple I know got engaged on the 10th of the month, so 7 months later they married on the 10th of that month.
If you know a lot of out of town friends or family will come to the wedding, give them plenty of time for travel arrangements. Particularly people who have kids or older people might appreciate time to save up to purchase plane tickets or take time off work to plan a road trip to the wedding.
And since we live in the South, I do (begrudgingly) have to address football season. Football is just under God to a lot of people here--my dear sister being one. If football or any other sporting event is important to you, consider game schedules when looking at dates. (I was married on the homecoming of one of the biggest football schools in Alabama, and many of my groomsmen resented that, at least a little.)

2. Budget

Money is one of the biggest issues with a wedding. It takes quite a bit--yes, even for the DIY bride or budget bride. Unless you elope or go to the courthouse, you are going to spend money.

Before you even try on dresses talk about the budget. If your parents will be paying or helping, gather them, your fiance and hone your collective accounting skills. Talk honestly about what resources you all have, what you want your wedding day to be like, and try to work out an initial budget.

Here's a few budget considerations:

Don't forget about gratuities, taxes and things like that. Those can add up quickly and take a chunk out of the budget!
Be willing to compromise. Decide what your top 3 non-negotiables are for your wedding. Mine were dress, photography and cake. I would certainly urge you to keep photography as one of those top 3...when its all over, that will be all that is left from your wedding! Photography is very, very important.

3. Find a Professional Photographer

As I emphasized on the budget section, photography is so important. As I meet new photographers, I try to gauge how far out they stay booked with clients. Some of the best can stay booked up a year in advance! But alternative-day weddings are increasingly popular, so if you are willing to have a Friday, Sunday or even a Tuesday wedding, you can often book a high-demand photog, and at a discount!Weddings have a small "off season" too, so consider January-February or November wedding dates too if who you want is booked.

Now, let me address briefly the "professional" part. Hiring a professional wedding photographer is also very important. Aunt Susie my take great pictures of her kids and even have invested in a fancy camera, or sorority-sister Ashley might be dabbling in photography because of the vintage camera she picked up. However, I would caution you to think twice before booking them to document your wedding. You do not get a do-over on your wedding day, and booking a photographer who has a proven portfolio and experience is important. Your photos (and video) are all that you will have left of your wedding when its over. Most girls will keep their dress, stick and invitation and a napkin in their scrapbook, but that's about it.

The flip side of this is that I know what it is like to try to get jobs to build experience so that potential clients will book you. So I completely understand if Aunt Susie or sorority-sister Ashley are wanting to build a photography business! And what better way, than to shoot a friend or love one's wedding? This is also something to consider. You just have to weigh the options and the pro-and-cons. And alternative for this might be to ask Aunt Susie or sorority-sister Ashley to do your engagement shoot, bridal portraits, or even a post-wedding couple's shoot. This gives them the experience they might want, saves you money (because you can negotiate those things out of your photography contract), and they get to come and be a guest at the wedding--not working the wedding.

4. Find a Wedding Planner and Director

You knew that was coming, right? :) This hopefully will answer your questions of "Why do I need a planner?". It is important to interview and try to book a planner early on.

Here's a few considerations:

A planner can help narrow down your vision and will help keep you on budget to make that vision a reality. Not to mention having a planner is much easier than you doing all the googling and worrying about how everything will work.
Hiring a planner/director early on in the process is key in making sure that, again, all the design and detail elements work together. But also this means you have someone objective to bounce ideas off, vent frustrations and cry to if things get crazy. Booking early on means that your planner will also be able to help you book those sought-after vendors too!
I offer month-of and day-of services, but I do book up, so do not wait until a month before your wedding to book a day-of director! And of course, booking me 6 months in advance means that as you have questions or problems, I am able to help you and offer advice.

Planning Help: Questions to Ask Any Vendor

I would like to start a regular article on my blog that answers some of the more common planning questions and issues! Welcome to "Planning Help"! Here's an article that I have gleaned info from several sources, other vendors, and my own experience!

7 Questions You Must Ask a Wedding Professional Before Booking Them

Hiring the right team is critical to planning your dream wedding…and it can also be quite stressful.

How do you find the right match for you? How do you know who to trust? Where do you go for advice?

First of all, this is not an easy task and it’s totally normal for couples to feel overwhelmed, frustrated or confused.

It’s not like you plan a wedding every day! This is all probably brand new to you, so be patient with yourself.

A few tips to finding the right ones for you…

Do Your Homework. You’ll get much more out of a meeting or conversation with a wedding professional if you do a little background homework first. Spend some time on the internet or talking to friends who’ve recently been married. Find out the average prices in your area and what services are available. Get an idea of what you like and don’t like. Wedding websites and chat rooms can be a great resource. This way when you meet with a wedding professional you’ll be able to ask better questions and have an idea of what to look out for.

Meet With Them. An in person meeting is the best way to interview a potential wedding vendor. It lets you get the full experience of their personality, style and professionalism. If that’s not possible, have a phone conversation.

Ask Questions. There are no stupid questions! Make sure you get clear, specific answers to your questions. If you aren't sure what something means, ask them to clarify. Keep asking questions until you completely understand. If a wedding vendor has a problem with you asking questions, they probably aren’t the one for you. The best wedding professionals are patient, understanding and take the time to help you make the best choices for your wedding.

Listen. Don’t just hear the words they say, really listen. Watch the vendor’s body language. Are they confident and comfortable with their response? Do they look and sound nervous? Do you get a “funny feeling” about them? Take all the sights, sounds and feelings into account along with their responses; if your gut tells you something isn’t right, it probably isn’t.
Check References. Portfolios are hand-picked to show off the best work, but they may not represent the “average” wedding performance. Videos are edited for the optimum presentation. But real referrals from satisfied clients are hard to fake.

Here are 7 Must Ask Questions to ask ALL your potential wedding professionals before booking:

1. How many weddings do you do per year? How much experience do you have?

This is an extremely important question. Ideally, your wedding professional should have ample experience specifically with weddings. Not only will they be more skilled in their craft, this also makes them a valuable source of information and ensures that your wedding day goes smoothly.

2. How much do you cost?
Price is often relative, especially when you factor in experience, reputation and expert skill. Generally, the most talented professionals have a higher price tag because they are worth it, but that is not ALWAYS the case. I am competitively priced, but accessible to almost any bride's budget!

3. How much is the deposit?

4. What specifically is included in that cost?
Because packages often vary, it’s likely that you won’t be able to compare one vendor exactly to the next without doing a little figuring. The lowest cost isn’t necessarily the best deal; some higher quotes include services that you have to pay extra for in other packages. Make sure you take this into account.

5. What happens if I cancel? What happens if you cancel?
Find out if your deposit is refundable under any conditions. Does the wedding professional have a back up plan if something happens to them?

6. Do you use a contract?
If the answer is No, RUN! A contract is designed to protect both you and the wedding professional. Don’t settle for a verbal agreement that won’t hold up in court.

7. Are there any additional fees?
Taxes, service charges and travel fees can add up quickly. Make sure you understand exactly what is included and if there are any other fees you’ll have to pay. This should be clearly defined in your contract.

This sweet couple were married at at The American Village in Montevallo. It is a beautiful setting with historical buildings and a lovely barn for receptions, located about 30 minutes south of Birmingham.

For their wedding, I provided day-of directing services for the ceremony and reception, both on site-at The American Village. I also provided decorating services, which included consulting on design and implementing what the bride and her mom decided on.

I brought an assistant (my mom) and employed a small army of other friends who wanted to help this sweet family! We transformed the barn into a lovely setting for the Woods' reception.

The reception tables featured burlap overlays, mason jars with Gerber daisies and tea candles--perfect for a simple June wedding! Me and my team set up the tables, decorated the reception space and assisted the caterers with any set-up they needed. This assured the bride and her mom that everything was taken care of, exactly how they planned. Angela and her family and friends were able to relax and enjoy the day!

A fun feature at the reception was Jason's unique groom's cake! He loves the outdoors, so they designed a cake that looks like a camper! His cousin provided the haystack candies, a perfect accompaniment for the groom's cake table.

Jessica Wright Photography graciously gave me these beautiful shots from the wedding to use here and on my website. Jessica is wonderful to work with and captured the day perfectly. And her second shooter just happened to be one of my best friends, Rachel Jones!

All these great vendors were a joy to work with and helped make Angela and Jason's wedding a smooth and enjoyable day!

Inspiration Board: Natalie's Rustic Chic Wedding

Sweet Natalie is getting married in April...and just so happens to be marrying my cousin! We have long considered her a part of the family, but this just makes it "official"!

I am helping her with some design inspiration and ideas, and we met with her florist, Janet of Flower Buds, the other day to start confirming things. They decided on mostly all-white florals, with some carefully chosen green.

Natalie wants an rustic, yet still elegant, look for their wedding. She has chosen dusky purple gowns for her Maids and wants to accent the purple with touches of soft gray and muted silver. The setting for their nuptials will be Altadena Valley Presbyterian and reception at B & A Warehouse.

It looks like details are starting to come together, but I created Natalie an Inspiration Board this week, to help both of us get things tied together!

Will & Sarah Beth

I wanted to retro-actively blog all the weddings I did over the spring and summer, mostly to help people get an idea of exactly what I can do for an event. Each wedding is different, and for each one that I did this year, I was able to customize my services to fit exactly what they needed!

Will and Sarah Beth were married on August 14, 2010, at Shades Mountain Independent Church, with the reception following at The Avon Theater. As one of the church directors for SMIC, I was initially hired to provide Day-of Directing services, but once Sarah Beth got into the planning process a little deeper, she called on me to help out in a couple of other areas.

For this wedding I helped Sarah Beth coordinate florals, using my good friend Rachel Winstead, a "budding" florist in the Birmingham area. :) I had the privilege of directing Rachel's wedding about six years ago, and we've remained great friends. I was so excited when she started pursuing floral design over the last year or so! I love when I get the chance to work with a good friend!

Coordinating the floral look with Rachel was very easy. Sarah Beth was not a picky bride, but she knew she loved blue hydrangeas, roses, and calla lilies and wanted a mostly-white floral palette. Rachel provided gorgeous bouquets and simple boutonnieres. She also ordered extra blue hydrangeas and white roses for me to use in ceremony and reception decor.

Ceremony decor was very simple, using the church's candelabras, and the groom's mother provided two faux hydrangea arrangements that were placed on pedestals at the altar. The extra-special touch for the ceremony decor came from pew markers that the bride borrowed from a good friend. The markers were hand-made fabric pockets that held a hydrangea bloom. They added just the right pop of color down the aisle!

At the reception venue, Sarah Beth needed 9 guest tables, the food serving table, and the bride's cake table decorated. The venue is very pretty by itself, so she felt like keeping decor simple was a good plan, plus it saved a lot of money! She gave me creative license to design the decor, so I got busy researching and formulating a plan! Playing off the color palette of French blue and white, I designed a simple table scape in two variations. To save money, we kept the flowers to a minimum.

We re-purposed the bridesmaids' bouquets on four of the tables, using bubble bowls filled with floral crystals and lit from within with a floralyte. We then surrounded that with short pillar candles to give the table a soft glow.

On the other five tables, I used simple pieces. I used inspiration from my own backyard, taking tree branches and spraying them white. Anchored in glass cylinder vases, I cascaded faux white rose petals from the branches. The arrangement was lit from within the vase with a floralyte and surrounded by a bed of blue hydrangea blooms and tea lights. The effect was light, simple and airy--perfect for a summer afternoon wedding!

It was a joy to help guide Will and Sarah Beth through their big day--we were all friends before their engagement, so this was truly a pleasure. My husband, Scott, and I were also honored to serve this sweet couple their first Communion during the wedding ceremony! That certainly helped add to to special-ness of the day for all of us!
